Pumpkin Apple Streusel Muffins

I found this recipe and made a few changes.  Enjoy! 

1 1/2 cups all-purpose flour

1 cup of wheat flour
2 cups white sugar
1 1/2 tablespoons pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs, lightly beaten
1 (15-16oz) can of pumpkin puree
1/2 cup vegetable oil
2 1/2 cups peeled, cored and chopped apple

Streusel Topping: 
4 tablespoons all-purpose flour
1/2 cup white sugar
1 teaspoon ground cinnamon
1 stick of butter 

1. Preheat oven to 350 degrees.  Lightly grease 24 muffin cups.  
2.  Mix the flour, sugar, pumpkin pie spice, baking soda, and salt in a large bowl.  In another bowl, mix the eggs, pumpkin and oil.  
3.  Mix the pumpkin and flour mixtures together until it's just moistened.  Stir the apples in.  Spoon the batter into the  muffin cups.
4. To make the topping, mix together flour, sugar and cinnamon. Cut in butter until you have coarse crumbs. Sprinkle the topping on top of the batter in the muffin tins.  
5. Bake for about 35 minutes, or until you can put a toothpick in the muffins and it comes out clean. 

They do not have a particularly strong pumpkin flavor, so I may add more pumpkin pie spice next time!
