Trip to New Bern: Day 3 - Our Anniversary

We woke up on our anniversary and headed to the waterfront to take a few pictures.  We tried to think of an anniversary tradition to have throughout the years, and we decided we would take a picture with the number of years every year on our anniversary.  It's kind of cheesy, but it will be really fun years from now when we have lots of pictures to look back on!

The sun was rising and it was beautiful outside! We got a couple of funny looks from people walking or running by, but we didn't mind it too much because we were excited about the day and the past year! :)

After taking pictures, we headed to Pine Knoll Shores to check out the aquarium.  We loved it and came to the realization that we are probably the biggest kids ever (well, we may have already known that).

Thomas was extremely excited before we even left on our trip to see the otters! They're so cute, and we were lucky to see them swimming and playing because the woman at the aquarium said they usually sleep most of the day.

We checked out everything, and I pretty much liked all that we saw except for the snakes!  It was very fitting that my favorite part of the trip was the gardens and Thomas' was the aquarium because I'm the one always pointing out flowers and plants to him, and he is always pointing out animals to me! :)

After the aquarium, we went back to New Bern to open up presents.  We decided to go the traditional route and do the paper theme for year one.  I made Thomas a scrapbook, and Thomas, oh how I love him.  He really is something else when it comes to gifts.  He has always made me the most beautiful, sentimental, creative gifts, and he did not disappoint this year! He made me a book called "The Official Guide to One Year: How to Get There and What do Do Along the Way." He really is amazing, and I am blown away by all of the time and love he puts into gifts, especially now that he is working a full time job and comes home tired every night. It was so, so sweet.  He really knows how to make me feel like the most special girl in the world!

Then it was time to cut into the top layer of our wedding cake, which was surprisingly very good!  The outer frosting wasn't that great, but the cake and the frosting in the middle ended up tasting really good.  We thought we'd have to throw it out after a bite, but we ended up eating it all week.

We spent the day relaxing together and looking at pictures from the wedding.  In the evening we got dressed up and headed out for a fancy dinner at the Chelsea Restaurant.

Thomas ordered tuna and I got a portabello mushroom stuffed with couscous.  It was so good! I definitely need to recreate that recipe.

We drove towards a marina because we had a sunset sail scheduled for the evening, but when we were about 5 minutes away the captain called and said it was cancelled because of the weather.  We were disappointed, but Thomas quickly suggested we go out for ice cream instead, and I could not say no to that.  We went to the Cow Cafe which was filled with everything and anything with cows that you could ever want.

I got key lime pie ice cream and Thomas got an ice cream sundae, both of which were delicious.  We had so much fun eating and laughing over dessert!

It was such a special day, and we were so thankful to be able to do so many fun things with each other.  We were also extremely thankful for our family members who gave us such generous anniversary gifts that enabled us to do so many exciting things on our trip!

Love,
Caitlin

  2. Great memories! The pic of you in the lobster pose was hysterical! Had me laughing out loud. We enjoyed our cake one year later. But then again, I could easily make 3 square meals out of cake! Thanks for sharing your wonderful vacation!

  6. I remember wondering if our cake would be edible after a whole year too, but it really was very good! Freezers are a miracle of modern science :) I'm glad you and Thomas had such a fun trip!
