Cupcakes for Two

When I make a batch of desserts, eating "just one" somehow ends up turning into "just two." Before you know it, it's "just three," and all of a sudden we're left with an empty plate two days later wondering where they all went.  My husband is the same way, and we definitely do not need to eat a whole batch of cupcakes by ourselves, so I was really excited to find this recipe on Pinterest to make a batch of two cupcakes.

Vanilla Cupcake Recipe: 

1 egg white
2 tbsp sugar
2 tbsp melted butter
1 tsp vanilla
1/4 cup flour
1/4 heaping teaspoon baking powder
pinch of salt
1 1/2 tbsp milk

1. Preheat oven to 350 degrees.
2. Mix all wet ingredients.
3. Mix the dry ingredients with the wet ingredients until smooth.
4. Pour the batter evenly between the two cupcake liners.
5. Bake it in the oven for 10-15 minutes.

I decided to make my own chocolate frosting since I don't care for whipped cream frostings.  The recipe I made didn't make quite enough icing to pipe it onto the cupcakes to make them look pretty, but I figured it didn't matter since I was making them just for us, so I just slathered it on them and popped a chocolate Easter egg on top.  Looks don't affect the taste. :)  Next time I will double the frosting recipe so I can make them look a little cuter.

Chocolate Frosting Recipe: 

2 tbsp softened butter
2/3 cup powdered sugar
1 teaspoon milk
1 teaspoon cocoa powder

1. Mix all ingredients together until smooth
2. Add more milk or more powdered sugar to get it to your desired consistency.

It's the perfect recipe for two people, and we don't have to worry about having too much dessert sitting around the apartment, especially with all the Easter candy our parents gave us. I think I might eat half today and half tomorrow...let's be real though, I'll probably eat "just one." :)
