Sunday Sweets - Chocolate Chip Cookie "Cupcakes"

I got this amazing recipe from, and my husband and I already ate one before lunch!

1 stick butter, softened
1/2 cup light brown sugar, packed
1/2 cup granulated sugar
1 large egg
1/2 tablespoon vanilla extract
1 3/4 cups all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 bag Hershey's milk chocolate chips

Preheat oven to 350 degrees F. Spray a muffin tin with cooking spray. Set aside 1/2 cup of the chocolate chips in a plastic bag. Cream the butter and sugar in a large bowl until they are fluffy and light. Add egg and vanilla and beat until well combined. Mix the flour, salt, and baking soda in another bowl, and then add them to the wet ingredients. Beat them with mixer until they're combined.. Add to the wet ingredients and beat on low speed until just combined. Add the remaining chocolate chips and stir to combine.

Microwave the sealed bag of chocolate chips in the oven Microwave for 30 seconds. Remove bag and flip, microwaving for an additional 10-15 seconds until all the chips are softened. Set aside to cool.

Divide the cookie dough in half. Scoop 1.5-2 tbsp of dough into 10 of the openings and flatten it out. Cut at tip in the corner of the plastic bag with the melted chocolate and pour some chocolate on top of the cookie dough.

Scoop the rest of the cookie dough on top of the chocolate. Bake them until the edges are slightly browned, about 15-20 minutes. You should cool them before removing them from the tin, but we couldn't wait!

We ate them slightly gooey, warm, and topped with ice cream! Yum!
