Saint Patrick's Day Weekend

It's been a really fun and busy weekend!  One of my good friends from college came to visit on Friday, so I had a really good time catching up with her.  On Friday night I went out to dinner with some of my friends in my program to celebrate one girl's birthday.  On Saturday my husband and I spent a lot of time in my school library.  He did stuff for work and I did school work, and it was so fun having him as my "study buddy" in there! Saturday night we got dressed in green to head out to the Saint Patrick's Day Party at our church.  We were really blessed to get free tickets because when we were walking around the church one night looking for someone to purchase them from, we ended up running into a woman from our Bible Study.  She and her husband were no longer able to go because their grandchildren were coming into town.  It was super sweet of her to give us them without taking our money because they were kind of pricey!

We had so much fun! There was delicious food, good company, and lots of dancing.  My hubby even sported some green pants to be extra festive!  
Our church had a bagpipe band come out to play for a little bit, and they were amazing! 
We are so grateful that we found such an amazing church community to be a part of here.  We have met a lot of wonderful people and we hope to become further involved throughout the time we are in this city.  

Anyways, when we got up this morning we went for a long run, and we were able to wear just tshirts and shorts!  I am loving the warmer weather.  We went to church and the grocery store afterwards and then came home to get a lot of work done.  We made these cheesy quinoa bites for dinner, BUT our big carrots were moldy, so my husband had to grate baby carrots to use for them!!  It was very entertaining, and I'm glad he didn't cut himself! 
Also, I found some Thin Mints hidden in one of our cabinets because I bought them from one of my professors a while ago and hid them because I got them from her right at the beginning of Lent.  I remembered seeing the idea for Thin Mint truffles on Pinterest a while ago, so I of course had to give it a try for our Sunday treat. The recipes I found when I Googled called for frosting, but I ended up using cream cheese like you would with Oreo truffles. I mixed together crushed cookies from one sleeve of the box with about 2 tablespoons of cream cheese.  I mixed a little bit of peppermint oil with semisweet chocolate chips and dipped the truffles in that, and we loved how they turned out! 
Time to get back to writing papers! Gotta love grad school! ;)
