7 Quick Takes Friday (Volume 2)



Pinterest has been an awesome tool for finding new recipes.  Here are 7 vegetarian recipes I've made that my husband and I have both really enjoyed.  *Note* These are not my pictures, they are from the linked blog posts with the recipes.

Couscous and Feta Stuffed Peppers from The Smitten Kitchen
I made these for our Valentine's Day dinner this year and they were delicious!  We tend to buy green peppers because the red ones are almost double the cost, but it was a nice treat for the occasion. :)

Spinach Burgers from The Domestic Mama and Village Cook:
 They sound gross, but don't let the name scare you away.  Even my meat-loving hubby loves them. The recipe doesn't tell you the amount of frozen spinach to use, but I used two frozen boxes and they turned out great.

Homeade Pizza from Budget Bytes:  
We make homeade pizza a lot, and I use the recipe for this crust every time.  I love topping mine with sauce and lots of veggies, and my husband likes pepperoni and bacon on his.

Spinach and Artichoke Mac and Cheese from The View from Great Island
 I love spinach and artichoke dip, so I thought this macaroni and cheese was delicious! I substituted 1% milk for the whole milk to make it a little bit healthier.

Zucchini Quinoa Lasagna from Peas and Thank You:  
This is probably my favorite new recipe! However, I didn't make it vegan.  I used regular cream cheese and Italian cheese inside.  I also didn't use basil or parsley in it, only because neither of us like a lot of herbs in our meals.

Spaghetti Squash with Apples and Toasted Pecans from Cookin Canuk
This is another meal that sounds kind of odd like the spinach burgers, but it turned out really well!  I love spaghetti squash - when you cook it up, it turns out like noodles and you get a serving of vegetables, which is a win-win situation.

Beezie's Black Bean Soup from All Recipes
This is really flavorful! I just recommend cutting the recipe in half if you're making it for two.  You'll still have leftovers from it! 

Unrelated to food, I can't wait to see The Hunger Games this weekend!  I feel like we have been waiting for so long for it to come out.  The books were not my usual style of reading at all, as I tend to like more realistic books or non-fictional books.  However, I ended up really enjoyed the series and am looking forward to this movie!

  2. If you ever make it my way, stop at Trader Joe's for .69 red peppers! Looks delicious; I might have to try it this week!

    1. Wow, I definitely will! We buy our food at Walmart and it's .74 for a green one. I wish we had Trader Joe's here!

  3. Unrelated, despite the word "hunger". ;) I'm looking forward to seeing it too! Thanks for sharing the recipes...must check some of those out! Oh yes, as to peppers--I get a bag of 3 peppers--1 green, 1 red, 1 yellow--at Aldi for something like $1.99, I think. Much cheaper than at the regular grocery store.

  6. Those recipes look so good! I just love Budget Bytes. She's been such a good resource during this first year of marriage. Have you tried her spinach lasagna roll-ups? SO GOOD.
